With the arrival of good weather, you want to eat fresh fruits, such as peaches and apricots, which give a lot of play when you include them in a dish. They can accompany a main course or include them in salads for the healthiest. However, the best way to taste them is to include them in desserts and that is why we want to share with you this delicious recipe:
Peach and Apricot Cake
For the filling, you will need only 3 peaches and 3 medium-sized apricots, brown sugar, honey and cinnamon and a puff pastry for the base. To prepare the filling you must caramelize the pieces of fruits in a frying pan over low heat and adding the honey and the cinnamon to give a more special touch that will enhance the aroma. Once they are soft and juicy you will pour them into a bowl with the puff pastry in the base, covering it with another puff pastry and then put it in the oven and ready!
This vegetarian dish can be served as an entree or as a main dish and is ideal for these hot days that will come as it is a very light and perfectly combinable. This gazpacho is elaborated like the traditional one, with tomato, red pepper and cucumber, but adding the boneless cherries and a dash of orange juice to give it a sweet touch. Finally add oil, salt, vinegar and garlic to taste and ready to serve in a nice container.
