Autumn is a time of transition in which we move from hot days to cold days. We prepare ourselves for the winter and our dishes become more elaborate. At CINATUR we are distributors of vegetables and today we want to talk about the zucchini, a vegetable used a lot in the Mediterranean diet and one that has many beneficial properties.

Zucchini consists mostly of water, 95% to be exact. It contains a high amount of minerals, vitamins and trace elements. We can find phosphorus, potassium, magnesium and calcium. The vitamins that predominate are Vitamin C, B3 and provitamin A. The consumption of this vegetable rich in nutrients will favor the cardiovascular system and controls cholesterol, it is also ideal for people who are thinking of losing weight because it contains few calories. After knowing the beneficial properties of this fantastic vegetable, we want to show you the versatility that has its use in the kitchen with these two recipes that you cannot stop doing this fall.

Zucchini and carrot cream

This recipe is ideal to serve in cold days and as a dish for vegetarians, in addition only contains 292 kcal per serving.

Ingredients: 3 potatoes, 2 green zucchinis, 2 carrots, 100 g of your favorite cheese and 800 ml of water. Salt, pepper and olive oil to taste.

Preparation: peel and boil all the vegetables for 12 minutes minus a potato and a zucchini. These last two are cut into cubes and sautéed. When everything is cooked, grind and add the cooked dices apart. Add salt and pepper to taste and at the end the grated cheese and place it in the oven for 5 minutes.

This is a fun snack that will triumph among your guests. In addition, it is cooked in the oven to make it much healthier.

Ingredients: 1 zucchini, olive oil and seasoning to taste.

Preparation: Preheat the oven to 225ºC. Cut the zucchini into thin circles, like the thickness of a coin and place them on the oven tray on a special paper. Season it to taste add a little oil and bake the chips for 40 minutes. Remove and let cool for at least 3 hours to make them extra crispy. What are you waiting for to cook these recipes?
