The aubergine is a vegetable often used in the kitchen. It is very versatile and can be eaten in many ways; boiled, baked or sautéed but never raw, because it can become toxic. This colorful vegetable comes from India and was introduced in Spain by the Muslims. It belongs to the Solanaceae family and it is a main ingredient in the Mediterranean diet. Thanks to its high-water content, it is ideal to purify the body and include them in diets to lose weight. As vegetable exporters that benefit our health, in Cinatur we have chosen the eggplant as a product worthy of highlighting in our special vegetable series from March. Its powerful properties and the fact that it is very rich in water makes it an essential ingredient in our kitchen.

Properties of the aubergine

We must highlight the three great properties of this rich vegetable. It is Antioxidantdiuretic and depurative. Thanks to this, eating aubergine steadily will improve cellular activity, stimulate kidney activity and improve the intestinal process thanks to its fiber content. Another great property that we must highlight is its healing power, thanks to its high-water content and its high levels of a powerful antioxidant called chlorogenic acid.

What is the nutritional composition of the aubergine?

As we have already mentioned, this vegetable is very low in calories and contains many vitamins such as B1, B2 or B6, as well as essential minerals to guarantee a great health. The approximate quantities per 100 grams are the following:

  • Water: 93,70%
  • Carbohydrates: 2,39 grams.
  • Fiber: 2,5 grams.
  • Proteins: 1,25 grams.
  • Fats: 0,18 grams.
  • Calcium: 16,39 milligrams.
  • Potassium: 210 milligrams.

Aubergine growing period

At Cinatur, the aubergine production is schedule from September to June. The perfect time to consume it in autumn, winter and spring and include it in the most elaborated dishes, both hot and cold.

Expert´s advice

To fully benefit from all the properties of the aubergine, it can be consumed as infused water. You just have to cut it into slices, put it in a container with a lid, fill it with water and a bit of lemon juice. Let it rest for 24 hours so that the water absorbers all the properties of this magnificent vegetable and enjoy it!
