Properties of the aubergine

Another great property that we must highlight is its healing power, thanks to its high-water content and its high levels of a powerful antioxidant called chlorogenic acid.
What is the nutritional composition of the aubergine?
As we have already mentioned, this vegetable is very low in calories and contains many vitamins such as B1, B2 or B6, as well as essential minerals to guarantee a great health. The approximate quantities per 100 grams are the following:

Aubergine growing period
At Cinatur, the aubergine production is schedule from September to June. The perfect time to consume it in autumn, winter and spring and include it in the most elaborated dishes, both hot and cold.
To fully benefit from all the properties of the aubergine, it can be consumed as infused water. You just have to cut it into slices, put it in a container with a lid, fill it with water and a bit of lemon juice.
